Oh yes! I have been dying to make me some baked oatmeal, only the recipes I kept finding weren’t the hearty style baked oatmeal I was craving so i created my own recipe. This baked oatmeal recipe is definitely a hearty, healthy and convenient breakfast for all. One of the fabulous things with baked oatmeal is you can change it up any which way you want, like a lot. Add ingredients or subtract ingredients all according to your likings. You can get pretty creative. Following my first experience with baked oatmeal I think the next one I bake is going to have blackberries in it….yumm! That just sounds like heaven to me.
Oh yeah, and think of the health benefits you are getting from baked oatmeal. You are adding to your daily fiber intake, stabilizing your blood sugar, longer lasting satiety, and helping to protect you against heart disease, just to name a few.
What you will need: measure cup, measuring spoons, 2 mixing bowls, 8″ casserole/baking dish, and the below listed ingredients
INGREDIENTS

2 cups Old Fashion Oatmeal

1/2 cup unsweetened coconut flakes

1/2 chopped pecans

1 tsp cinnamon

1 tsp baking powder
-
1/4 cup brown sugar
-
1/4 Ghirardelli semi sweet mini chocolate chips

1 cup unsweetened vanilla almond milk

2 eggs, beaten
-
2 tsp vanilla
-
1/4 cup melted coconut oil
INSTRUCTIONS
Pre-heat your oven to 375 degrees.
Spray your baking dish.
Put all of your dry ingredients into a large mixing bowl and stir.
Beat your eggs and combine with other wet ingredients in a medium mixing bowl.
Pour all your wet ingredients into your dry ingredients and stir until blended. A couple of minutes.
Then pour your mixture into your greased casserole dish and insert into the oven.
Bake for about 25 minutes and enjoy!!!
Serve warm, then store in refrigerator and eat for breakfast throughout the week. You will save yourself a bunch of time all the while you’ll be eating a yummy and healthy breakfast. Not to mention, your kids are sure to love this baked oatmeal too. However, you may want to omit any type of nuts, kids always seem so finicky about nuts.
Remember, there are so many different variations so mix it up to your likings.
Use the Basic Baked Oatmeal Ingredients and add or omit what you like.
