Butterscotch Protein Balls

Butterscotch Protein Balls
These little suckers are super tasty and pretty darn filling! Not to mention, these protein balls are healthy (minus the butterscotch chips) and simple to make, perfect to make with your little ones! They are also a super easy and convenient snack to grab in a hurry, and they are known to satisfy a sweet tooth! Doesn’t get much better than that!

Here are the simple ingredients:

  • 2 cups of Old Fashion Oats
  • 1/2 cup peanut butter (I heat in the microwave for approx. 30 seconds)
  • 1/3 cup honey
  • 1/4 cup butterscotch chips
  • 1/4 cup chopped walnuts 

Directions:

Combine all ingredients into a mixing bowl, mix until ingredients are completely blended together and refrigerate for about 1 hour or overnight to allow mixture to bind together. Roll into bite size balls and set onto parchment paper. Should make about a dozen depending on how big or small you make your balls. Store in a ziplock or airtight container in the refrigerator for up to two weeks. Feel free to make variations to the ingredients, you can add chia seeds to up the health kick or mini chocolate chips or omit the walnuts if your not a fan. I have made these with just oats, peanut butter, and honey and they are delish! Beware- these Butterscotch Protein Balls taste like oatmeal butterscotch cookie dough. Enjoy!
